If you’re craving vanilla and raspberries raw treats, these slices are exactly what you need, plus they are high in protein, and this makes these delicious slices the perfect workout treat. for the base:
1 cup coconut flour
1/2 cup quinoa flakes
1/4 cup maple syrup
1/2 cup nut butter (I used crunchy almond butter from myprotein)
For the filling:
2 cup cashews *soaked overnight or in boiling water for at least 2 hours
1 cup full fat coconut milk *make sure is full fat, because if not the consistency won’t be as creamy
1 scoop vanilla protein powder (I used the one from vivo life)
1/2 cup frozen raspberries
Mix in a large bowl all the ingredients for the base. Form a dough.
Press the dough into a baking tray and put it in the freezer.
Put all the ingredients for the filling EXCEPT for the raspberries into a food processor or blender and mix for 2-3 minutes until your filling reaches a creamy and thick consistency., then add your frozen raspberries and pulse 2-3 times. Remember, you want the whole raspberries, you don’t want them to completely mix with the filling.
Pour the filling on top of the base. If you want you can add more frozen raspberries on top.
Put it back in the freezer and let it sit for at least 2 hours. ENJOY!
before eating your frozen slices, put them in the microwave at the lowest temperature for 30 sec - 1 min!! The filling will become so creamy, exactly like a cheesecake consistency, and the base will be a little bit softer!
