Zucchini Muffins (Vegan & Gluten Free)

Banana and Almond flour Zucchini Muffins… These muffins are so simple and so easy to make: they are soft with a bit of crunch thanks to the walnuts inside. Super healthy and super delicious. These are the perfect snack or dessert for when you’re craving something sweet but not too heavy!

Hello beautiful people, how are you all?

This is actually my first time filming a”Bake With Me” video, so I hope you really like it! If you do please let me know, so I know exactly what kind of content you prefer!! I honestly had so much fun filming this, and it was so out of my comfort zone: I’ve always felt really ashamed of my kitchen because it’s not really aesthetic!! But you know what? NOTHING SHOULD EVER STOP YOU FROM DOING WHAT YOU LOVE! So, the message behind this video is:

Get out of your comfort zone, do what you love, don’t wait for the perfect time, don’t wait for everything to be perfect… just do it and enjoy the process!

I know this video isn’t the best: but I had fun filming it and even editing it, and that’s all that matters!

I am gonna leave here the exact ingredients for this muffins:

ingredients:

  • 1 1/2 tbsp flax meal + 3 tbsp water

  • 1 cup banana flour

  • 1/2 cup almond flour

  • 1 1/2 tsp baking powder

  • cinnamon (never too much)

  • 1/4 cup coconut sugar

  • 1 tbsp coconut oil

  • 1 tsp apple cider vinegar

  • 1/4 peanut butter

  • 1 cup shredded raw zucchini

  • 1/2 cup crushed walnuts

  • 1 pinch sea salt
